Description
This simple salad is so easy to make and it goes with so many different meals!
Ingredients
Scale
For the Dressing:
- 3 Tbsp. olive oil, extra virgin
- 3 Tbsp. apple cider vinegar
- 1 Tbsp. Dijon mustard
- 1 Tbsp. maple syrup (or honey, if not vegan)
- 1/2 tsp. sea salt
- 1/4 tsp. ground black pepper
For the Salad:
- 8 cups mixed greens
- 1/4 cup sunflower seeds
- 1/4 red onion, sliced thinly (optional)
- 1 cucumber, thinly sliced (optional)
Instructions
- Put all of the ingredients for the dressing in a glass measuring cup or bowl and whisk.
- Place the mixed greens in a large mixing bowl or serving bowl.
- Slice the onion and cucumber, if including. Add them to the mixed greens in the bowl.
- Add the dressing and toss well. Top with the sunflower seeds and any other optional ingredients before serving.
Notes
- Add halved cherry tomatoes for additional vegetables.
- Add some diced bacon for additional flavor and texture.
- Turn this into a main dish by adding chicken, shrimp or steak to the salad.
- Add some toasted pecans instead of the sunflower seeds.
