Strawberry Grapefruit Refresher

Description

This delicious non-alcoholic cocktail is vibrant, tasty and so easy to make!


Ingredients

For the Grapefruit Ginger Rosemary Simple Syrup: (optional, makes more than needed)

  • 1/2 cup honey (or agave syrup)
  • 1/2 cup water
  • 1/4 cup grapefruit juice, freshly squeezed
  • 1 sprig rosemary
  • 2 slices fresh ginger
  • 1/2 Tbsp. grapefruit zest

For the Refresher:

  • 1 grapefruit, juiced
  • 8 strawberries
  • 1/4 tsp. lime juice, freshly squeezed
  • 1 Tbsp. simple syrup
  • 2 cups water
  • Splash of ginger beer for topping (optional)

Instructions

  1. Make the simple syrup first. Put all of the ingredients in a small saucepan. Bring to a boil, then add the rosemary and simmer for 30 minutes. Let the liquid cool, before using.
  2. Juice the grapefruit and remove the greens from the strawberries. Place all the ingredients in a Nutri Bullet or blender and puree.
  3. Pour about 6 oz. of the mixture over ice in a low-ball glass and top with a splash of ginger beer (optional). Garnish with a rosemary sprig or a slice of fresh strawberry.

Notes

  • This refresher mixture keeps well in the refrigerator for several days, so you can make a batch of it ahead of time, if you like.
  • Adjust the amount of simple syrup to your liking. Use less to keep sugar content lower.
  • Leftover simple syrup can be stored in the refrigerator.
  • You can make an easier simple syrup with just equal parts water and honey if you like or buy one, if you don’t want to take the time to make it.
