Description
These crispy and delicious air fried potatoes are simple to make and are the perfect side to your main dish!
Ingredients

- 5 lb. small potatoes (red, mix or fingerlings)
- 2 Tbsp. olive oil
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. sea salt
- Freshly ground black pepper
- 1 Tbsp. fresh thyme leaves
- 1–2 Tbsp. grated parmesan cheese (optional)
Instructions
- Slice the potatoes in half length wise. For larger potatoes, you may need to quarter them. The key is to have the potato bites about the same size, so they cook evenly.
- Put the potatoes in a mixing bowl. Add the oil and seasonings (garlic powder, onion powder, salt and pepper). Stir them well and transfer the potatoes to your Air Fryer.
- Set to air fry at 375 degrees Fahrenheit for 15 minutes.
- Toss the potatoes halfway through.
- Once the potatoes are done cooking, transfer them to a serving bowl and sprinkle with fresh herbs and a little grated parmesan cheese (optional).
Notes
- Feel free to use chopped parsley, rosemary or oregano in place of the thyme leaves.
- Omit the parmesan cheese or make vegan parmesan with walnuts/pecans, nutritional yeast and salt, if eating dairy free or vegan
