These crispy and delicious air fried potatoes are simple to make and are the perfect side to your main dish!

The best recipes in my book are the ones that take little effort to make, are tasty, don’t involve tons of ingredients and can be prepared while I make the rest of the meal. This side dish hits the mark!

This dish is naturally gluten free, vegan and vegetarian without the addition of the parmesan cheese.

What You’ll Need:

  • small potatoes
  • olive oil
  • garlic powder, onion powder, salt and black pepper
  • fresh herbs
  • parmesan cheese (optional)

Making the Recipe:

The prep to make this side dish is ridiculously simple!

You’ll wash and dry the potatoes and then cut them in half. You may need to cut the larger potatoes into quarters. The key is making the potato bites about the same size so they cook up evenly.

Next, place the potatoes in a mixing bowl and toss them with the oil. Season them with the garlic powder, onion powder, salt and black pepper and then transfer them to your Air Fryer.

Cook them on air fry mode at 375 degrees for 15 minutes. Give them a toss halfway through.

Season the potatoes with fresh herbs and grated parmesan cheese, before serving.

Ingredients

Scale
  • 5 lb. small potatoes (red, mix or fingerlings)
  • 2 Tbsp. olive oil
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. sea salt
  • Freshly ground black pepper
  • 1 Tbsp. fresh thyme leaves
  • 12 Tbsp. grated parmesan cheese (optional)

Instructions

  1. Slice the potatoes in half length wise. For larger potatoes, you may need to quarter them. The key is to have the potato bites about the same size, so they cook evenly.
  2. Put the potatoes in a mixing bowl. Add the oil and seasonings (garlic powder, onion powder, salt and pepper). Stir them well and transfer the potatoes to your Air Fryer.
  3. Set to air fry at 375 degrees Fahrenheit for 15 minutes.
  4. Toss the potatoes halfway through.
  5. Once the potatoes are done cooking, transfer them to a serving bowl and sprinkle with fresh herbs and a little grated parmesan cheese (optional).

Notes

  • Feel free to use chopped parsley, rosemary or oregano in place of the thyme leaves.
  • Omit the parmesan cheese or make vegan parmesan with walnuts/pecans, nutritional yeast and salt, if eating dairy free or vegan
