Apple Cinnamon Energy Bites

Description

A very healthy snack that is easy to make and sure to please the whole family!


Ingredients

Scale
  • 1 1/2 cups rolled oats, gluten free
  • 1/2 cup sunflower butter
  • 1/2 cup apple butter (or organic applesauce)
  • 1/4 cup maple syrup
  • 2 Tbsp. chia seeds
  • 1 tsp. vanilla
  • 1/4 cup chopped pecans

Instructions

  1. Put all of the ingredients in a large bowl and mix together. I find it helps to mix the chia seeds together with the oats first and then add in your remaining ingredients.
  2. Set the bowl in the refrigerator for 5-10 minutes to firm up a bit.
  3. Place a piece of parchment paper on a small baking sheet.
  4. Roll the batter into balls about 3 inches in diameter and place them on the parchment. The batter should feel a little sticky on your hands. Rinse your hands halfway through if needed.
  5. Place the balls in the freezer for 5 minutes or so, before placing them in an airtight container and storing them in the refrigerator.

Notes

To make this recipe nut free, omit the pecans or add sunflower seeds in their place

The energy bites will keep in the refrigerator for about a week or in the freezer for several months
