Chocolate Bark with Pistachio and Dried Fruit

Description

This tasty chocolate bark is really easy to make, festive and so delicious. It is gluten free and can be made vegan and dairy free.


Ingredients

Scale
  • 8 oz. white chocolate chips, melted
  • 1/3 cup pistachios, chopped
  • 1/3 cup dried cranberries, chopped
  • ½ cup dark chocolate chips, melted

Instructions

  1. Place a piece of parchment paper on a small baking sheet or the countertop.
  2. Chop the pistachios and the cranberries and set aside.
  3. In a medium glass bowl, heat the white chocolate chips in the microwave for 1 minute. Remove from the microwave and stir well. Microwave for another 15-30 seconds, if needed, to ensure the bark is completely melted. Be careful to not overheat the chocolate.
  4. Spread the white chocolate out over the parchment paper into a rectangle shape.
  5. Sprinkle the pistachios and cranberries evenly over the top of the white chocolate. Press down lightly into the chocolate.
  6. In a small glass bowl, warm the dark chocolate chips. Heat in the microwave for 30 seconds, stir and heat a little longer if needed. Once melted, drizzle the dark chocolate over the bark.
  7. Place in the refrigerator or freezer for 30 minutes. Once that is done, break up the bark into pieces and place in an airtight container. Keep the bark in the refrigerator.

Notes

  • This recipe can be made dairy free and vegan by substituting the chocolate. You may need to use dark chocolate instead to accomplish this.
  • Substitute dried cherries or apricots for the cranberries, if you prefer.
