Description
This energy bite is different than the others. It’s a little bit sweet and a little savory. It’s a snack that tastes like dessert!
Ingredients

- 1 cup rolled oats, gluten free
- 1/3 cup sunflower butter
- 1/3 cup Turkish figs, diced in small pieces
- 1/4 cup pistachios, dry roasted (chopped)
- 3 Tbsp. honey
- 1 tsp. vanilla extract
- 1/4 tsp. orange zest
- 2 Tbsp. mini dark chocolate chips (optional)
Instructions
- Put all of the ingredients but the chocolate chips in a large bowl and mix together well.
- Add the chocolate chips and fold into the mixture, if you are including them.
- Form the batter into balls. I find it works best to press the mixture together between your hands first and then roll it into a ball. These energy bites are more sticky than moist.
- Place the bites in an airtight container and store them in the refrigerator.
Notes
The energy bites will keep in the refrigerator for about a week or in the freezer for several months.
