Fig Pistachio & Orange Energy Bites

This energy bite is different than the others. It’s a little bit sweet and a little savory. It’s a snack that tastes like dessert!

I’ve been obsessed with energy bites lately. With the whole family home all day working and in school, there is a lot of snacking going on. These energy bites make it easy to grab a healthy snack during the day.

I knew I wanted to make an energy bite using figs instead of dates. I thought pistachios and honey would pair nicely with the figs. They did, but were a little too sweet for me. The addition of some orange zest really balanced the flavors.

These are so delicious. But, I may be a bit biased!!

Here’s What You’ll Need:

Making the Recipe:

Start by dicing the figs into small pieces and chopping the pistachios.

Zest the orange with a Microplane or a fine grater.

Next, add the oats, sunflower butter, honey, chopped figs and nuts to a large mixing bowl. Add in the zest and mix it all together well.

If you’re using the mini chocolate chips (optional), stir them in the mixture just before forming them into balls.

You can store the energy bites in the refrigerator for about a week or the freezer for a few months.

Ingredients

Scale
  • 1 cup rolled oats, gluten free
  • 1/3 cup sunflower butter
  • 1/3 cup Turkish figs, diced in small pieces
  • 1/4 cup pistachios, dry roasted (chopped)
  • 3 Tbsp. honey
  • 1 tsp. vanilla extract
  • 1/4 tsp. orange zest
  • 2 Tbsp. mini dark chocolate chips (optional)

Instructions

  1. Put all of the ingredients but the chocolate chips in a large bowl and mix together well.
  2. Add the chocolate chips and fold into the mixture, if you are including them.
  3. Form the batter into balls. I find it works best to press the mixture together between your hands first and then roll it into a ball. These energy bites are more sticky than moist.
  4. Place the bites in an airtight container and store them in the refrigerator.

Notes

The energy bites will keep in the refrigerator for about a week or in the freezer for several months.
