Description
This panna cotta is made with natural sugars and homemade berry sauce. It perfectly fits the bill when you need a little splurge or something special to serve.

Panna Cotta:
- 1 Tbsp. gelatin
- 2 Tbsp. oat milk
- 2 cups heavy cream or whipping cream
- 6 Tbsp. coconut sugar
- 1 1/2 tsp. vanilla
Berry Topping:
- 1 cup frozen berries
- 3 Tbsp. honey
- pinch of baking soda
- 1 Tbsp. arrowroot starch (or corn starch)
- 2 Tbsp. water
- 2 tsp. lemon juice, freshly squeezed
Instructions
- In a small saucepan, add the milk and sprinkle the gelatin on top. Let stand 1 minute.
- Place the pot on low heat and heat until the gelatin is dissolved (1-2 minutes). Be careful to not let the milk boil. Immediately, remove from heat.
- In a large saucepan, add the cream and sugar. Heat on medium low heat until the cream begins to boil. Immediately remove the pan from heat.
- Add the vanilla to the gelatin mixture and then add it to the large pot of sugar and cream and blend well.
- Pour mixture in to ramekins or small glasses/bowls. Let the mixture cool and then refrigerate for 5 hours or overnight until the panna cotta is firm.
- To make the berry topping, mix the berries, honey, starch, water and lemon juice together in a saucepan. Heat to boiling and then lower to simmer until it reaches your desired thickness.
- Pour the berry sauce into a bowl and let it cool. The sauce will keep overnight if making this dessert the day beforehand.
- Before serving, dip the molds into a pan of boiling water for about 3-4 seconds to loosen the panna cotta from the sides. Gently use the tip of a knife to release the panna cotta and invert it onto a serving plate. You could also serve the panna cotta in the dishes/glasses to keep it simple!
- Top with berry sauce before serving.

Feel free to use any mixture of berries you wish
A caramel sauce would also be delicious!
