Panna Cotta with Berry Sauce

Description

This panna cotta is made with natural sugars and homemade berry sauce. It perfectly fits the bill when you need a little splurge or something special to serve.


Ingredients

Panna Cotta:

  • 1 Tbsp. gelatin
  • 2 Tbsp. oat milk
  • 2 cups heavy cream or whipping cream
  • 6 Tbsp. coconut sugar
  • 1 1/2 tsp. vanilla

Berry Topping:

  • 1 cup frozen berries
  • 3 Tbsp. honey
  • pinch of baking soda
  • 1 Tbsp. arrowroot starch (or corn starch)
  • 2 Tbsp. water
  • 2 tsp. lemon juice, freshly squeezed

Instructions

  1. In a small saucepan, add the milk and sprinkle the gelatin on top. Let stand 1 minute.
  2. Place the pot on low heat and heat until the gelatin is dissolved (1-2 minutes). Be careful to not let the milk boil. Immediately, remove from heat.
  3. In a large saucepan, add the cream and sugar. Heat on medium low heat until the cream begins to boil. Immediately remove the pan from heat.
  4. Add the vanilla to the gelatin mixture and then add it to the large pot of sugar and cream and blend well.
  5. Pour mixture in to ramekins or small glasses/bowls. Let the mixture cool and then refrigerate for 5 hours or overnight until the panna cotta is firm.
  6. To make the berry topping, mix the berries, honey, starch, water and lemon juice together in a saucepan. Heat to boiling and then lower to simmer until it reaches your desired thickness.
  7. Pour the berry sauce into a bowl and let it cool. The sauce will keep overnight if making this dessert the day beforehand.
  8. Before serving, dip the molds into a pan of boiling water for about 3-4 seconds to loosen the panna cotta from the sides. Gently use the tip of a knife to release the panna cotta and invert it onto a serving plate. You could also serve the panna cotta in the dishes/glasses to keep it simple!
  9. Top with berry sauce before serving.

Notes

Feel free to use any mixture of berries you wish

A caramel sauce would also be delicious!
