Pumpkin Pie Energy Bites

Description

These tasty energy bites double as a great snack or a healthier treat as we transition into the Fall season!


Ingredients

Scale
  • 1 1/2 cups rolled oats, gluten free
  • 1/2 cup pumpkin puree
  • 1/3 cup sunflower seed butter (or other nut or seed butter)
  • 3 Tbsp. pure maple syrup
  • 1 tsp. pure vanilla extract
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. ground cloves
  • 1/4 tsp. sea salt (if seed/nut butter is unsalted)
  • 1/4 cup pecans, chopped
  • 1/4 cup white chocolate chips (optional)

Instructions

  1. In a medium bowl, mix together all of the dry ingredients but the chocolate chips.
  2. Add in the wet ingredients (seed/nut butter, maple syrup, vanilla, pumpkin puree) and stir well to combine.
  3. Fold in the chocolate chips, if using.
  4. Place the bowl in the refrigerator for 5-10 minutes to let the wet ingredients soak into the oats and firm up a bit.
  5. Place some parchment paper on a baking sheet. Roll the dough into balls and return the energy bites to the refrigerator for 10 minutes to set before transferring them to an airtight container.
  6. Store the energy bites in the refrigerator.

Notes

  • You can substitute dark chocolate chips for the white chocolate chips, if you prefer.
  • Substitute chopped walnuts for the pecans.
  • Substitute chia seeds for the nuts, if you are wanting to make this nut free.
  • Substitute honey for the maple syrup, if you prefer or if you are eating vegan.
