These tasty energy bites double as a great snack or a healthier treat as we transition into the Fall season!
Ingredients
Scale
- 1 1/2 cups rolled oats, gluten free
- 1/2 cup pumpkin puree
- 1/3 cup sunflower seed butter (or other nut or seed butter)
- 3 Tbsp. pure maple syrup
- 1 tsp. pure vanilla extract
- 1 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/4 tsp. ground cloves
- 1/4 tsp. sea salt (if seed/nut butter is unsalted)
- 1/4 cup pecans, chopped
- 1/4 cup white chocolate chips (optional)
Instructions
- In a medium bowl, mix together all of the dry ingredients but the chocolate chips.
- Add in the wet ingredients (seed/nut butter, maple syrup, vanilla, pumpkin puree) and stir well to combine.
- Fold in the chocolate chips, if using.
- Place the bowl in the refrigerator for 5-10 minutes to let the wet ingredients soak into the oats and firm up a bit.
- Place some parchment paper on a baking sheet. Roll the dough into balls and return the energy bites to the refrigerator for 10 minutes to set before transferring them to an airtight container.
- Store the energy bites in the refrigerator.
Notes
- You can substitute dark chocolate chips for the white chocolate chips, if you prefer.
- Substitute chopped walnuts for the pecans.
- Substitute chia seeds for the nuts, if you are wanting to make this nut free.
- Substitute honey for the maple syrup, if you prefer or if you are eating vegan.
