Mixed Greens Salad with Pear & Walnuts

Description

This salad is so easy to make and complements many dishes. I especially love to eat this in the fall season, when I can find delicious pears.


Ingredients

Scale

Salad Dressing:

  • 1/4 cup olive oil (organic, extra virgin, cold pressed)
  • 2 Tbsp. cider vinegar
  • 1 tsp. honey
  • pinch of sea salt
  • 45 twists of freshly ground black pepper

Salad Base:

  • 6 cups mixed greens
  • 1 pear, sliced with skin on
  • 1/4 cup raw walnuts, toasted lightly
  • 1/4 cup dried cranberries

Instructions

  1. Mix all of the ingredients for the salad dressing together and whisk well. Set aside.
  2. Place the mixed greens in a large bowl
  3. Toast the walnuts in a skillet over medium heat until fragrant. This should take only a few minutes. Keep a close eye on them, while they are toasting so that they don’t burn! Move from the burner and let cool, while you prepare the rest of the salad.
  4. Wash the pear and slice it in strips the length of the pear (skin on). Place the pear slices on top of the mixed greens.
  5. Add the toasted walnuts and dried cranberries to the salad.
  6. Toss with the dressing and serve. Start with about half of the dressing and taste. Add more if needed.
