This salad is so easy to make and complements many dishes. I especially love to eat this in the fall season, when I can find delicious pears.
I like to keep my cooking healthy, simple and tasty. With our busy schedules, I don’t have a lot of time to make dinner during the week. Salads are something I love, because I can make them quickly while our protein is cooking. And, I can pack them full of nutritious ingredients!
Here’s What You’ll Need:
There are two basic components to making this: a dressing and the salad base.
Making the Recipe:
For the salad dressing, combine the oil, cider vinegar, honey, salt and pepper in a small bowl or glass measuring cup. Whisk and set aside.
Next, toast your walnuts in a skillet over medium heat for a few minutes. They should be fragrant and light brown. You’ll want to toss them several times and watch them carefully so they don’t burn.
Then, put the mixed greens in a large serving bowl. Cut the pear in thin slices the length of the pear and add to the greens. Top that with the toasted walnuts and cranberries and add the dressing.

Ingredients
Salad Dressing:
- 1/4 cup olive oil (organic, extra virgin, cold pressed)
- 2 Tbsp. cider vinegar
- 1 tsp. honey
- pinch of sea salt
- 4–5 twists of freshly ground black pepper
Salad Base:
- 6 cups mixed greens
- 1 pear, sliced with skin on
- 1/4 cup raw walnuts, toasted lightly
- 1/4 cup dried cranberries
Instructions
- Mix all of the ingredients for the salad dressing together and whisk well. Set aside.
- Place the mixed greens in a large bowl
- Toast the walnuts in a skillet over medium heat until fragrant. This should take only a few minutes. Keep a close eye on them, while they are toasting so that they don’t burn! Move from the burner and let cool, while you prepare the rest of the salad.
- Wash the pear and slice it in strips the length of the pear (skin on). Place the pear slices on top of the mixed greens.
- Add the toasted walnuts and dried cranberries to the salad.
- Toss with the dressing and serve. Start with about half of the dressing and taste. Add more if needed.
