Description

If you are looking for a refreshing cocktail without the alcohol, this mule is just the ticket!


Ingredients

Scale
  • 2 Tbsp. lime juice, freshly squeezed
  • 1/2 Tbsp. honey simple syrup
  • 1/4 cup plain sparkling water
  • 4 oz. ginger beer
  • ice (crushed or smaller cubes)
  • 34 fresh mint leaves

Instructions

  1. Make a simple syrup (see the notes below).
  2. Squeeze the lime juice. Add the lime juice, simple syrup and sparkling water to the bottom of a glass.
  3. Add enough ice to fill half of the glass. Top with ginger beer.
  4. Add the fresh mint leaves as a garnish.

Notes

  • To make the simple syrup, add equal parts honey and water to a sauce pan over medium heat, just until it blends together. Set it aside and let it cool, before adding it to your drink. You can make this ahead of time and keep it in the refrigerator for 1-2 weeks. You can use maple syrup or cane sugar to make a simple syrup as well.
  • To express the oils in the mint leaves, smack them between your hands before adding them to the glass. You could also just give them a twist or tear them up too.
