Sometimes you just want something different to drink that is refreshing and feels special but is not full of alcohol. That’s where the perfect non-alcoholic cocktail comes in. This one is made with simple ingredients you are likely to have around and can be whipped up in minutes.
What You’ll Need:
- lime
- honey simple syrup
- sparkling water
- ginger beer
- mint leaves
Making the Recipe:
You’ll start by making a simple syrup. Mix together honey and water in a saucepan in equal amounts. Put the sauce pan over medium-low heat and warm until the mixture is blended. Set it aside and let it cool, while you make the rest of your drink. I usually make this simple syrup ahead of time. It keeps in the fridge for weeks and is always at the ready!
Next, squeeze the lime juice directly into your serving glass. Add a little simple syrup and sparkling water to the glass and give it a stir.
Fill the glass about half full of ice and top it off with the ginger beer.
You can either smack the mint leaves between the palms of your hands to express the oils and then throw it into the glass or place the mint on the top of the glass as a garnish.

Ingredients
- 2 Tbsp. lime juice, freshly squeezed
- 1/2 Tbsp. honey simple syrup
- 1/4 cup plain sparkling water
- 4 oz. ginger beer
- ice (crushed or smaller cubes)
- 3–4 fresh mint leaves
Instructions
- Make a simple syrup (see the notes below).
- Squeeze the lime juice. Add the lime juice, simple syrup and sparkling water to the bottom of a glass.
- Add enough ice to fill half of the glass. Top with ginger beer.
- Add the fresh mint leaves as a garnish.
Notes
- To make the simple syrup, add equal parts honey and water to a sauce pan over medium heat, just until it blends together. Set it aside and let it cool, before adding it to your drink. You can make this ahead of time and keep it in the refrigerator for 1-2 weeks. You can use maple syrup or cane sugar to make a simple syrup as well.
- To express the oils in the mint leaves, smack them between your hands before adding them to the glass. You could also just give them a twist or tear them up too.
