Pumpkin Pie Overnight Oats

Description

These overnight oats are simply delicious! I so enjoy these in the fall season, but love them so much that I eat them year around.


Ingredients

Scale
  • 1/2 cup rolled oats, gluten free
  • 1/2 cup oat milk (or other non-dairy milk)
  • 1 Tbsp. maple syrup
  • 1/4 cup pumpkin, canned
  • 1/2 tsp. pumpkin pie spice
  • 1/4 cup chopped pecans

Instructions

  1. Measure out oats and milk into a large cup, small bowl or mason jar. Stir and mix well.
  2. Add in the maple syrup, pumpkin, pumpkin pie spice and chopped nuts. Mix well.
  3. Cover and store in the refrigerator overnight. They would probably firm up in 4-5 hours, if you’re really desperate!

Notes

Substitute honey for the maple syrup, if preferred and you don’t need this recipe to be vegan

Have fun making your own versions of overnight oats with different flavor combinations. The milk, oats and a sweetener are the base and there are infinite possibilities of what you can mix in with them.

Add in ideas: berries, nuts/seeds, nut/seed butter, cacao, carob powder, cinnamon, etc.
