Simple Greek Salad

Description

This salad is a great complement to many main dishes. I really like to serve it as an alternative to a greens salad to change things up.


Ingredients

Scale
  • 8 tomatoes, seeded and cut into a large dice
  • 2 cucumbers, cut into a large dice
  • 1/2 red onion, thinly sliced and quartered
  • 1 avocado, cubed
  • 1/2 cup olive oil (organic, extra virgin)
  • 1/4 cup red wine vinegar
  • 2 garlic cloves, minced
  • 1/2 tsp. sea salt
  • 1/2 tsp. black pepper
  • 1/4 cup lemon juice, freshly squeezed
  • 2 Tbsp. fresh herbs (dill, oregano, basil, parsley)

Instructions

  1. Wash and cut up the vegetables and the avocado, per the ingredients list.
  2. In a large bowl, combine the vegetables and avocado.
  3. In another bowl or glass measuring cup, combine the olive oil, vinegar, minced garlic, lemon juice, garlic, sea salt and pepper. Whisk until well combined.
  4. Finely mince the fresh herbs, right before dressing and serving the salad.
  5. Pour the dressing over the vegetables, add the herbs and toss together before serving.

Notes

Consider adding a 1/4 cup pitted kalamata olives (halved)
