Description
This salad is a great complement to many main dishes. I really like to serve it as an alternative to a greens salad to change things up.
Ingredients

- 8 tomatoes, seeded and cut into a large dice
- 2 cucumbers, cut into a large dice
- 1/2 red onion, thinly sliced and quartered
- 1 avocado, cubed
- 1/2 cup olive oil (organic, extra virgin)
- 1/4 cup red wine vinegar
- 2 garlic cloves, minced
- 1/2 tsp. sea salt
- 1/2 tsp. black pepper
- 1/4 cup lemon juice, freshly squeezed
- 2 Tbsp. fresh herbs (dill, oregano, basil, parsley)
Instructions
- Wash and cut up the vegetables and the avocado, per the ingredients list.
- In a large bowl, combine the vegetables and avocado.
- In another bowl or glass measuring cup, combine the olive oil, vinegar, minced garlic, lemon juice, garlic, sea salt and pepper. Whisk until well combined.
- Finely mince the fresh herbs, right before dressing and serving the salad.
- Pour the dressing over the vegetables, add the herbs and toss together before serving.
Notes
Consider adding a 1/4 cup pitted kalamata olives (halved)
