Simple Greek Salad

This salad is a great complement to many main dishes. I really like to serve it as an alternative to a greens salad to change things up.

My favorite part of this side dish is the use of fresh herbs, raw vegetables and avocado. It’s not only delicious but it is full of nutrients that are nourishing to the body.

I use only real food ingredients in this dish and try to buy fresh, local and organic produce whenever possible. It makes all of the difference in taste and in the health benefits of this salad.

What You’ll Need:

This salad is full of so many colorful and nutritious vegetables and herbs.

Making the Recipe:

Your first step is to wash and cut up all of the vegetables and the avocado. Once that is completed, you will add the vegetables to a large mixing bowl.

Next, you will make the dressing. In a small bowl or glass measuring cup, add together the oil, vinegar, lemon juice, garlic, salt and pepper. Whisk the ingredients together until well combined.

You will want to mince the herbs last so they stay really fresh.

Add the salad dressing and fresh herbs to the vegetables. Mix them together and serve.

Ingredients

Scale
  • 8 tomatoes, seeded and cut into a large dice
  • 2 cucumbers, cut into a large dice
  • 1/2 red onion, thinly sliced and quartered
  • 1 avocado, cubed
  • 1/2 cup olive oil (organic, extra virgin)
  • 1/4 cup red wine vinegar
  • 2 garlic cloves, minced
  • 1/2 tsp. sea salt
  • 1/2 tsp. black pepper
  • 1/4 cup lemon juice, freshly squeezed
  • 2 Tbsp. fresh herbs (dill, oregano, basil, parsley)

Instructions

  1. Wash and cut up the vegetables and the avocado, per the ingredients list.
  2. In a large bowl, combine the vegetables and avocado.
  3. In another bowl or glass measuring cup, combine the olive oil, vinegar, minced garlic, lemon juice, garlic, sea salt and pepper. Whisk until well combined.
  4. Finely mince the fresh herbs, right before dressing and serving the salad.
  5. Pour the dressing over the vegetables, add the herbs and toss together before serving.

Notes

Consider adding a 1/4 cup pitted kalamata olives (halved)
