This healthy snack is easy to make and mixes up your normal snacking routine!
I really enjoy sushi, but I had not actually made any myself until recently. This snack is a play on sushi without the rice.
You can make one of these in minutes and it requires only 4 ingredients. What’s not to love? It’s tasty, simple and healthy!
Here’s What You’ll Need:
- Nori Sheets
- Smoked Salmon, Wild Caught
- Avocado
- Cucumber
Making the Recipe:
Start by slicing the cucumber into thin strips. Next slice about 1/2 of an avocado into strips. You could also mash it up, if you want it creamier like a spread.
You will next lay out a nori sheet on a cutting board. Place the avocado strips or mashed avocado about an inch from one of the ends of the nori sheet.
Put your cucumber strips on top of the avocado. Then, you’ll put some pieces of smoked avocado on top of the cucumbers & avocado.
Starting from the lower end, roll it up. Wet the last inch of the nori sheet with a little cold water. This will help the sides of the nori to stick together better.
I’d recommend making 2 rolls for a single serving. When you’re done, cut each roll in half and enjoy!

- 8 thin cucumber slices, about 3 inches in length
- 1/2 avocado, slices or mashed
- 1 oz. smoked salmon, wild caught
- 2 nori sheets
Instructions
- Slice the cucumbers into thin strips about 3 inches long.
- Slice the avocado in strips or mash it up, if you prefer the avocado creamier.
- Lay out a nori sheet on a cutting board. About an inch from the bottom end, place the avocado on top of the nori sheet. Next, add the cucumber strips and then the salmon.
- Roll up the nori roll from the bottom end first. Leave about 1 inch of space at the end of the nori sheet. Wet it with some cold water and finish rolling. This will help the nori sheet stick together.
- Make a second roll and then slice each of them in half or in pieces.
Notes
You can use a sushi roller to roll these up, if you want the rolls a little tighter than hand rolling them will accomplish. If I’m just eating these as a snack, I don’t bother (one less thing to wash!).
