Chocolate Chip Blondies (GF, DF, Vegan)

This dessert is a classic, is so easy to make and will have you going back for more! The bonus is that they are free of most allergens and vegan too.

My favorite desserts are those that don’t take long to make and taste delicious, even when made gluten free. These blondies don’t disappoint. When I make a batch, I rarely have any leftover and that speaks volumes to me!

What You’ll Need:

  • sunflower seed butter
  • vegan butter (or coconut oil)
  • pure vanilla extract
  • ground flaxseed
  • maple syrup
  • brown sugar
  • gluten free flour
  • baking powder
  • sea salt
  • chocolate chips

 

Making the Recipe:

The first thing you’ll want to do is make the flax egg. Mix the ground flaxseed and water together and let the mixture rest for 10 minutes, while you assemble the rest of the ingredients.

Preheat your oven to 350 degrees Fahrenheit and line a square 8×8 pan with parchment paper overhanging the edges.

Next, mix together all of the wet ingredients but the flax egg in a larger bowl. Mix all of the dry ingredients except the chocolate chips in a separate bowl.

 

Once the flax egg is ready, mix it in with the other wet ingredients.

 

Then, add the dry ingredients to the wet ingredients and stir them together until they form a ball of dough. Lightly fold in all but 1/4 cup of the chocolate chips to the batter.

 

Put the dough in the parchment lined pan and gently press it into the corners of the pan with your mixing spoon or your hands. Sprinkle the remaining chips on top and lightly press them into the batter.

 

Bake the Blondies for 20-25 minutes. Use a toothpick to see how done they are at 20 minutes. If it comes out clean, remove them from the oven. Let the pan cool a bit, before cutting them into bars.

For the Wet Ingredients:

  • 3/4 cup sunflower seed butter (or other nut or seed butter – natural and runnier)
  • 1/3 cup melted vegan butter (or coconut oil)
  • 2 tsp. pure vanilla extract
  • 2 Tbsp. flax meal
  • 5 Tbsp. water
  • 1/3 cup maple syrup
  • 1/2 cup light brown sugar

For the Dry Ingredients:

  • 1 ¼ cup gluten free flour (King Arthurs or Cup 4 Cup work well)
  • 1/4 tsp. sea salt
  • 1/2 tsp. baking powder
  • 3/4 cup chocolate chips (1/2 cup in the batter and ¼ cup on top of the mixture)
  • 1/2 tsp. Maldon flaked salt (optional)

 


Instructions

  1. Mix together the flax meal with the water to make “flax eggs”. Let the mixture rest for 10 minutes.
  2. Preheat the oven to 350 degrees Fahrenheit. Line an 8×8 baking pan with parchment paper.
  3. Melt the butter/coconut oil and add it to a large mixing bowl with the other wet ingredients. Stir everything together well to ensure the sugars are combined.
  4. Add the dry ingredients to the wet ingredients in the same bowl. Add in ½ cup of the chocolate chips to the batter and reserve the rest to top the bars before baking. Stir well.
  5. Transfer the batter to the lined baking pan. Sprinkle some extra chocolate chips over the top of the bars. Sprinkle a little Maldon salt flakes on top too, if you like (optional).
  6. Bake for 20-25 minutes. Use a toothpick to see how done the blondies are. The toothpick should come out clean. This usually takes 25 minutes but can vary based on your oven.

Notes

  • Enjoy Life brand of chocolate chips is free of most common allergens and easily found.
  • If you aren’t eating vegan and can tolerate eggs, you could use 2 eggs in place of the flax meal and water “flax egg”.
