This antioxidant Acai smoothie is tasty and provides a balanced meal of plant-based protein, fat and fiber.

Smoothies are great options when you need a quick meal or snack. If you design them with the right ingredients they can also be a very balanced option.

This smoothie uses frozen acai puree. Acai is has powerful antioxidants and a decent amount of fiber. So, it gives you that fruit taste without the sugar. The date adds the sweetener and some added carbs, but is a natural source of sweet in the smoothie. Protein comes from the milk, sunflower seed butter and spinach, along with some great nutrients.

This smoothie is free of the most common allergens too and is vegan and vegetarian. You can always make substitutes, if you don’t have to worry about allergies or sensitivities.

What You’ll Need:

  • Acai frozen puree
  • Medjool date
  • non-dairy milk
  • water
  • spinach
  • sunflower seed butter (or other seed or nut butter)
  • protein powder (optional for added protein)

Making the Smoothie:

Soak the date for about 15 minutes to soften it a bit. This will help it to blend into the smoothie better. Knock a few things off your to do list, while the date rests.

When you’re ready to make the smoothie, break up the acai puree into chunks and put them in your blender or Nutri Bullet. Add the spinach, milk and water, date, seed/nut butter and the protein powder (if using).

Blend it all together and enjoy!

Ingredients

Scale
  • 1 Medjool date
  • 1/3 cup frozen acai puree (about 1 100g packet)
  • 1 cup non-dairy milk (almond, oat, flax, cashew)
  • 1 cup water
  • 2 cups packed spinach
  • 1 to 1 ½ Tbsp. sunflower seed butter (or other nut/seed butter)
  • 1 scoop vanilla pea protein (optional – 10 to 20 grams)

Instructions

  1. Soak the date in some water for about 15 minutes before making your smoothie. This helps to soften it up and it blends into the mixture better.
  2. Once you are ready to make your smoothie, break up the acai into chunks and place them in a Nutri bullet or high-speed blender.
  3. Add in the spinach, followed by the milk and water.
  4. Then, top it off with the date, nut/seed butter and protein powder, if using.
  5. Blend it all together until it is smooth and enjoy!

Notes

  • If you need your smoothie a little sweeter, you can add an extra date.
  • If you are not eating vegetarian or vegan, you could use a whey-based protein.
  • This recipe has about 20-25g of protein in it already, from the milk, sunflower butter and spinach. Amounts can vary depending on your milk and nut/seed selections.
