Chocolate Bark with Pistachio and Dried Fruit

This tasty chocolate bark is really easy to make, festive and so delicious. It is gluten free and can be made vegan and dairy free.

I love a dessert that can be made in less than 30 minutes and made ahead. This chocolate bark is a family favorite.

With only 4 ingredients and a few tools, you can whip this up in 20 minutes. You can make it days or weeks ahead of your party or event and store it in the refrigerator until you are ready to serve it.

What You’ll Need:

  • white chocolate
  • dark chocolate
  • dried fruit
  • pistachios

Making the Recipe:

You’ll start by laying a piece of parchment paper on your kitchen counter or a baking sheet.

Next, chop up the pistachios (either by hand or in a food processor) and the dried fruit.

In a medium glass bowl, heat the white chocolate chips for about a minute. Remove the chocolate from the microwave and stir it well. Microwave another 15-30 seconds, if needed to ensure the chocolate chips are completely melted. Be careful to not overheat the chocolate.

Then, spread the white chocolate out over the parchment paper in the shape of a rectangle.

Sprinkle the chopped nuts and dried fruit over the white chocolate and press them down a bit into the chocolate layer.

You’ll next melt the dark chocolate in the microwave for about 30 seconds. Stir it and microwave for a little more time, if needed. Drizzle the dark chocolate over the top of the white chocolate, nuts and fruit.

Place the bark in the refrigerator or freezer to harden. Once that is done, you can break up the bark into bite sized pieces and store them in an airtight container in the refrigerator.

Ingredients

  • 8 oz. white chocolate chips, melted
  • 1/3 cup pistachios, chopped
  • 1/3 cup dried cranberries, chopped
  • ½ cup dark chocolate chips, melted

Instructions

  1. Place a piece of parchment paper on a small baking sheet or the countertop.
  2. Chop the pistachios and the cranberries and set aside.
  3. In a medium glass bowl, heat the white chocolate chips in the microwave for 1 minute. Remove from the microwave and stir well. Microwave for another 15-30 seconds, if needed, to ensure the bark is completely melted. Be careful to not overheat the chocolate.
  4. Spread the white chocolate out over the parchment paper into a rectangle shape.
  5. Sprinkle the pistachios and cranberries evenly over the top of the white chocolate. Press down lightly into the chocolate.
  6. In a small glass bowl, warm the dark chocolate chips. Heat in the microwave for 30 seconds, stir and heat a little longer if needed. Once melted, drizzle the dark chocolate over the bark.
  7. Place in the refrigerator or freezer for 30 minutes. Once that is done, break up the bark into pieces and place in an airtight container. Keep the bark in the refrigerator.

Notes

  • This recipe can be made dairy free and vegan by substituting the chocolate. You may need to use dark chocolate instead to accomplish this.
  • Substitute dried cherries or apricots for the cranberries, if you prefer.
