Pumpkin Pie Energy Bites

Pumpkin Energy Bites in Bowl with pumpkins.

These tasty energy bites double as a great snack or a healthier treat as we transition into the Fall season!

Fall is one of my favorite seasons. The change in weather, the fresh apples and everything pumpkin get me excited! Energy bites are a great healthy snack to make to get you through the busy day and are perfect as a little treat for those back to school lunches too!

What you’ll Need:

  • rolled oats, gluten free
  • pumpkin puree
  • nut or seed butter
  • pure maple syrup
  • pure vanilla extract
  • cinnamon, nutmeg and ground cloves
  • chopped nuts (pecans, walnuts, etc.)
  • white chocolate chips

Making the Recipe:

Start by mixing all of the dry ingredients but the chocolate chips together in a large mixing bowl.

Next, you will want to add the wet ingredients (pumpkin puree, nut/seed butter, vanilla, maple syrup, etc.) into the dry ingredients.

Make sure that you mix the nut butter into the oats really well. Then, fold in the white chocolate chips.

Let the batter sit in the fridge for about 5-10 minutes, before rolling them into individual balls. Place the balls on a parchment lined baking sheet and place them in the refrigerator or freezer for another 5-10 minutes to set.

Transfer them to an airtight container and store them in the refrigerator.

If your house is like mine, they won’t last long!

  • Substitute honey for the maple syrup, if you prefer or if you are eating vegan.
