Herb Marinated Lamb Chops

These lamb chops are flavorful and make a meal special, while not taking much effort to make.

I don’t eat lamb often, but I love to make these marinated lamb chops for special occasions. They are really easy to make and oh so delicious! In this recipe, I pan sear them, but I’ve also thrown them on the grill too.

What You’ll Need:

  • lamb rib chops
  • olive oil
  • garlic cloves
  • fresh herbs – thyme, mint, rosemary
  • spices – oregano, salt and black pepper

Making the Recipe:

You’ll start by doing a little prep and making the marinade for the lamb chops.

Mince the fresh herbs and the garlic.

Add the oil to a baking dish or small bowl. Add in the oregano, minced garlic and fresh herbs.

If you buy a rack of lamb, cut in between each rib bone to make individual small chops.

Season the chops on both sides with some salt and freshly ground black pepper.

Coat both of the sides of the lamb chops with the oil and herb marinade. Place them in a shallow baking dish and let them marinate for 30 minutes. While the lamb is marinating, make your side dishes to go along with the meal.

When you are ready to cook the lamb, heat a large skillet over high heat just until warmed, about a minute at most. Reduce the heat to medium and place the lamb chops in the pan. Cook the chops for about 3 minutes on each side.

Cook the meat to 135 degrees Fahrenheit, and then remove them from the pan to rest on a warm plate for 5 minutes before serving.

Enjoy with your favorite side dishes. Potatoes, a side salad or roasted vegetables pair nicely with these lamb chops.

For the Marinade:

  • 1 Tbsp. fresh thyme, leaves removed from stems
  • 1 Tbsp. fresh rosemary, minced
  • 1/2 Tbsp. mint leaves, minced
  • 1 Tbsp. dried oregano
  • 2 garlic cloves, minced
  • 4 Tbsp. olive oil (extra virgin, cold pressed, organic)

For the Chops:

  • 12 lamb rib chops
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 12 Tbsp. olive oil

Instructions

  1. Mince the fresh herbs and add them to a small mixing bowl. Add the dried oregano, minced garlic and olive oil and whisk well.
  2. If you buy a rack of lamb rib chops, cut between the bones to create individual chops.
  3. Season the chops on both sides with salt and pepper. Rub the marinade on both sides of the chops and let them rest at room temperature for 20 minutes.
  4. Heat a large skillet over high heat until warmed, about 30 second to 1 minute. Add the oil to the pan and make sure it coats the bottom of the pan. Reduce the heat to medium-high and sear the meat for 3 minutes on each side. Cook to medium rare at 135 degrees Fahrenheit.
  5. Transfer the chops to a warm plate and let them rest for 5 minutes before serving.

Notes

  • Serve with some garlic and rosemary mashed potatoes or air fried potatoes, a side salad or some roasted vegetables. Prepare the sides while the lamb is resting in the marinade and prior to searing it, so that everything is ready at the same time.
