Brownie Batter Bites

These brownie batter bites satisfy as a treat but aren’t loaded with tons of sugar. You can roll them in coconut, chopped nuts or dip them in some chocolate to make them more decadent.

I love these brownie batter bites for a treat that feels a little healthier. They are made with seed or nut butter, some cacao powder, maple syrup and a few other ingredients as a base and then it is up to you how much more you want to add to them!

What You’ll Need:

  • nut or seed butter
  • cacao powder
  • maple syrup
  • flour (cassava, coconut or chickpea)
  • mini chocolate chips
  • collagen peptides (optional for added protein)
  • add-ins (see the recipe for suggestions)

Making the Recipe:

Start by mixing together the nut or seed butter, cacao, maple syrup and flour in a mixing bowl.

Stir the batter together until the flour is mixed in and it forms into a batter. Fold in the chocolate chips and refrigerate the batter for 20-30 minutes.

Using your hands, roll the batter into balls. This should make about 16-18 bites.

Finally, have fun rolling each brownie bite in your favorite toppings. I usually will do several different varieties when I make a batch. Shredded coconut, chopped nuts, and melted chocolate are easy go to options.

For the Brownie Batter:

  • 3/4 cup organic nut or seed butter (sunflower butter, peanut butter, almond butter, etc.)
  • 3 Tbsp. cacao powder
  • 34 Tbsp. pure maple syrup (depending on sweetness preferred)
  • 1 Tbsp. coconut flour (use cassava or chickpea flour if coconut free)
  • 1/4 cup mini dark chocolate chips
  • 1 scoop collagen peptides (optional, for added protein)

For the Add-Ins (optional):

  • 1/41/2 tsp. peppermint extract – add to the batter
  • 1/4 tsp. orange zest – add to the batter
  • shredded coconut – roll the balls in the coconut
  • chopped nuts (pecans, hazelnuts, almonds) – roll the balls in the nuts or add to the batter
  • ground goji berries (for color) – roll the balls in the goji powder
  • ½ cup dark chocolate chips, melted and drizzled over the brownie bites

Instructions

  1. Mix together the nut/seed butter and maple syrup until smooth. Add in the cacao powder and flour and mix until dough-like. If your nut/seed butter is a bit drier, use less flour.
  2. Mix in the chocolate chips. Refrigerate the dough for 20-30 minutes, so the batter is easier to make into balls.
  3. Roll into 16-18 balls. Enjoy as is or add in additional flavors to the batter or roll the balls in your choice of coatings to make them even more flavorful and festive.
  4. Store the brownie bites in the refrigerator.

Notes

  • If using an extract in the batter, start small and taste the batter. You can always add more, if you feel it needs more flavor.
  • If using the chocolate to coat or drizzle over the bites, add a tsp. of butter or coconut oil to the chocolate to make it a little softer. If you don’t do this, it will work fine, but the chocolate will be drier and may crack more easily when biting into the brownie bites.
