Grilled Corn on the Cob with Herb Butter

This fresh grilled corn on the cob is easy to make. Served with some homemade herb butter, this corn is so tasty!

Fresh corn on the cob in season is amazing! This recipe takes the basic boiled ears of corn many of us grew up with to a new level. You’ll find grilling the corn so easy and it adds an extra depth of flavor. Top it off with some herb butter and it makes this corn even more delicious.

What You’ll Need:

  • corn on the cob
  • avocado oil
  • sea salt
  • freshly ground black pepper
  • salted butter
  • lemon juice
  • fresh herbs (dill, basil, cilantro)

Making the Recipe:

Shuck the corn and remove the silks. Rub each ear of corn with some avocado oil. Avocado oil has a higher smoke point and is great to use when you’re cooking at higher temperatures.

Season each ear of corn with a little salt and pepper.

Next, you’ll want to fire up your grill to about 350-375 degrees. While the grill heats up, you can make the herb butter.

To make the butter, you will first melt the butter in the microwave. Mince up the fresh herbs you want to use and squeeze the lime juice. Mix all of the ingredients together in a small bowl and set it aside.

Once the grill is hot, put the corn directly on the grates. Grill for a few minutes on each each side, about 5-7 minutes in total.

Serve the grilled corn slathered with a little herb butter with your favorite main dish!

For the Corn:

  • 4 ears of corn
  • 1 Tbsp. avocado oil
  • sea salt, to taste
  • freshly ground black pepper, to taste

For the Herbed Butter:

  • 4 Tbsp. salted butter
  • 1 Tbsp. lemon juice, freshly squeezed
  • 1 Tbsp. fresh herbs, minced (dill, basil, cilantro make great options)

Instructions

  1. Heat your grill to 350-375 degrees Fahrenheit.
  2. While the grill heats, shuck and remove the silks from the corn. Rub each ear the corn with a little oil and season it with salt and pepper.
  3. Melt the butter in the microwave.
  4. Mince the fresh herbs and squeeze the lemon juice. Add them to the melted butter and stir well. Set the butter aside.
  5. Grill the ears of corn for a few minutes on each side, about 5-7 minutes.
  6. Rub a little of the herb butter on each ear of corn before serving.

Notes

  • This recipe is written with 1 ear of corn being a serving. Increase the serving portions if you want to serve more than 1 ear of corn per person.
  • For a flavor twist to the butter, try making it with a tsp. of chipotle powder, chili powder or ground cumin instead of the herbs.
  • To make this dish vegan or vegetarian, use a vegan friendly butter to make the herb butter. You could also rub some additional oil on the corn after grilling and sprinkle it with the fresh herbs before serving.
