This refreshing street corn dish can be made in 10 minutes and is great with tacos or grilled burgers, chicken or steak.
You’ll love the simplicity of this dish. I keep some frozen fire roasted corn in my freezer at all times, because this side can be thrown together in minutes to go with many different proteins I’m may be making.
What You’ll Need:
- fire roasted corn
- avocado
- green onions
- cilantro
- lime
- jalapenos or mild green chilies (optional)
Making the Recipe:
Place the corn in a small serving bowl.
Next, chop the green onions and cilantro and cube the avocado.
Add the onions, cilantro and avocado to the bowl with the corn and squeeze the lime juice over the mixture. Add in the chilies if you are using them.
Give it all a good stir and taste. You may find you want a little added salt, depending the corn you are using or a little bit more lime juice. Once the corn is to your liking, store it in the refrigerator until you are ready to serve your meal.
If you are not eating dairy free, try topping the corn with a little freshly grated cotija cheese.

Ingredients
- 1 15oz can fire roasted corn (or 2 cups frozen, thawed)
- 1 large avocado, cubed
- 1/2 cup green onions, sliced thinly (about 2 onions)
- 1/3 cup cilantro, chopped
- 1 Tbsp. lime juice, freshly squeezed
Instructions
- Place the corn in a medium mixing bowl.
- Cube the avocado and chop the onions and cilantro. Add the avocado and onions to the corn and stir well.
- Squeeze the lime juice and add it to the street corn mixture. Mix well.
- Add the jalapeno or mild green chilies (optional) to the mixture and stir again.
Notes
- If not eating dairy free, feel free to add some freshly grated cotija cheese.
