Refreshing Watermelon Blueberry & Mint Smoothie

This healthy watermelon smoothie celebrates the fresh fruits and herbs of the summer season and tastes so refreshing.

I love buying local fresh produce in season. Not only does it keep things interesting with our meals, but it also gives our bodies a bit more diversity nutritionally. And, if you can buy from local farmers, it helps to reduce the carbon footprint and supports your local economy too! Win…Win!!

In every smoothie I create, I look for a balance of good fiber from fruits and vegetables, healthy fats and protein.

What You’ll Need:

  • Fruit – Watermelon & Blueberries
  • Fresh Herbs & Greens – Arugula, Mint & Basil
  • Lime
  • Avocado
  • Protein Powder
  • Chia Seeds (optional)
  • Cucumber (optional)

Making the Recipe:

First, cut up the watermelon and cucumbers (if including). You’ll also want to slice a lime to squeeze for fresh lime juice.

Next, you’ll add all of the ingredients to a high speed blender or Nutri Bullet and blend until smooth. It’s that easy!

This healthy watermelon smoothie celebrates the fresh fruits and herbs of the summer season and tastes so refreshing.


Ingredients

Scale
  • 1 cup watermelon, cut into pieces
  • 1/2 cup blueberries, frozen
  • 1 cup arugula (or cucumber slices)
  • 56 mint leaves
  • 56 basil leaves
  • 1 cup water
  • 1 tsp. lime juice, freshly squeezed
  • 1/4 avocado
  • 1 scoop of protein powder (unflavored or vanilla)
  • 1 Tbsp. chia seeds (optional)

Instructions

  • Put all of the ingredients in a high-speed blender or Nutri Bullet and blend until smooth.

Notes

  • Use an organic and vegan protein powder to keep this recipe vegan and dairy free.
  • Feel free to substitute cucumbers for the arugula, which will give the smoothie a milder taste. If you want to pack the smoothie with more veggies, add both!
  • You can use grass-fed collagen in place of protein powder, if you prefer.
  • Use non-dairy milk in place of the water, if you prefer
