This is one of my favorite go to recipes, when I’m time starved but want to put a good dish on the table for my family. It takes just a few ingredients and it is really easy to make.
When I was working in a corporate job with demanding hours, I’d often leave the house at 7 am. and not get back home until 6 pm. My husband and kids were starving and ready for dinner the moment I walked in the door. I didn’t have the energy to devote to making anything very complicated.
This dish became one of my regulars. I typically had all of the ingredients on hand. I also knew I’d be feeding them something nourishing and filling in less than 30 minutes.
While the chicken is baking, I’d usually make up a simple greens salad or a side of rice and beans.
Here’s what you’ll need:
This dish is made with just 5 ingredients: chicken, oil, taco seasoning, salsa and shredded cheese.
Making the recipe:
Start by washing your chicken and giving it a pat dry. Rub a little oil in a 9×13 baking dish and on the chicken to help seal in the juices while it’s cooking.
Rub the chicken with taco seasoning. You can use a store-bought package or make my homemade taco seasoning.
Next, top the chicken with your favorite salsa and cheese and bake in the oven.

This is an easy healthy family favorite dish that can be on the table in roughly 30 minutes.
Ingredients
- 1 Tbsp. avocado oil
- 1 1/2 lb. chicken breasts
- 4 tsp. taco seasoning
- 1 cup shredded cheese (colby jack)
- 1 cup prepared salsa
Instructions
- Preheat the oven to 375 degrees Fahrenheit
- Grease a 9×13 glass baking dish with oil
- Season each chicken breast with 1 tsp. taco seasoning and place in the baking dish
- Top the chicken breast with salsa and shredded cheese
- Bake in the oven for 20-25 minutes, depending on the size of the chicken breasts
Notes
Substitute cheddar or mexican blend cheese if you don’t have colby jack
Topping ideas: avocado, peppers, sour cream, shredded lettuce, etc.
