Roasted Lemon & Garlic Haricots Verts

This is a perfect healthy side dish that can be made quickly and with few ingredients.

On my busiest working days, I like to keep dinner time simple. I will usually make an easy protein and a vegetable side dish. This haricots verts recipe is very easy to make. You can roast the beans while you are cooking the protein and have dinner on the table in 30 minutes.

Here’s What You’ll Need:

  • haricots verts (french green beans)
  • avocado oil
  • lemon
  • garlic powder
  • sea salt
  • black pepper

Making the Recipe:

You will start by preheating your oven to 400 degrees.

Next, place a piece of parchment paper on a rimmed baking sheet. Put the washed beans on the parchment and drizzle the avocado oil over the beans. I use avocado oil when roasting above 350 degrees Fahrenheit, because it withstands the high heat better than olive oil.

The next step is to sprinkle the haricots verts with the salt, pepper and garlic powder. Mix the oil and seasoning with your hands or with tongs to coat the beans.

Roast them in the oven for 20 minutes. When they are done cooking, squeeze a little fresh lemon juice over them and serve.

Ingredients

  • 6 cups haricots verts
  • 1 Tbsp. avocado oil
  • 1/2 tsp. garlic powder
  • 1/2 tsp. sea salt
  • 1/4 tsp. ground black pepper
  • 23 squeezes of fresh lemon juice

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Wash the beans and let them dry on a towel.
  3. Place a piece of parchment paper (preferably unbleached) on a rimmed baking sheet. Put the green beans on the baking sheet, drizzle with avocado oil and then sprinkle with the seasonings.
  4. Mix the beans together with your hands or tongs to ensure they are evenly coated.
  5. Place in the oven and bake for 20 minutes.
  6. Once the beans are done roasting, drizzle them with some fresh squeezed lemon juice.

Notes

For a little added flavor, you can sprinkle the beans with a little nutritional yeast, before serving.

If not making this dish vegan, you could use Parmesan cheese instead of nutritional yeast.
