Grilled Chicken with Homemade Rub

Simplicity in a recipe can be a life saver when you’re pressed for time. This chicken dish uses a homemade rub and olive oil. It takes little prep and can be ready in less than 30 minutes.

I am often scrambling to juggle my busy work schedule with other family activities going on. Dishes like this one have been key to my ability to put a healthy meal on the table for my family.

I usually make a batch of the rub ahead of time to have on hand and cover several meals. Then, it is ready when I need it and I can put dinner together quickly in a half hour or less.

I usually pair this with a nice greens salad or a side dish that can be made while the chicken is cooking.

What You’ll Need:

Making the Recipe:

You’ll start by preheating your grill to 375 degrees Fahrenheit.

While the grill is heating, make the rub. I usually make several batches of this at one time, so that I have it on hand for the next time.

Next, you will coat the chicken breasts with olive oil and season them with the rub. Place them on the grill and cook for 15-20 minutes, turning them 2-3 times to make sure they are evenly cooked.

Serve with a delicious green salad or a side of vegetables.

For the Rub:

  • 1/2 tsp. black pepper
  • 1 tsp. sea salt
  • 1 tsp. paprika
  • 2 tsp. oregano
  • 2 tsp. thyme
  • 1 tsp. garlic powder

For the Chicken:

  • 4 chicken breasts, boneless
  • 1 Tbsp. olive oil
  • 1 Tbsp. chicken rub

Instructions

  1. Heat the grill to 375 degrees Fahrenheit.
  2. Mix all of the ingredients together for the rub in a small bowl and stir well to incorporate.
  3. Rub the chicken with olive oil and season with the rub.
  4. Cook the chicken for 15-20 minutes, until the juices run clear.

Notes

Safe internal cooking temperature for chicken is 165 degrees Fahrenheit
