This salmon is seasoned with a lemon and oil marinade with fresh herbs that make it absolutely delicious!

I love fresh herbs. I grow several kinds of fresh herbs in pots every spring and cannot wait to use them in my dishes. Fresh ingredients make such a difference in the taste of food. What’s more, I love that I know where and how they have been grown and can cut them fresh from the plant when I’m ready to use them.

Couple this herb and lemon marinade with some wild caught salmon and it is a match made in heaven! I love this dish either baked in the oven or grilled.

Making the Recipe:

Start by making the lemon herb marinade. I usually make this the night before or in the morning the day I plan to cook the fish.

First, you’ll mince the herbs. This recipe uses a combination of fresh herbs, including thyme, basil and rosemary. Feel free to be creative and mix up the herbs you use based on what you have and what you love!

Next, mix together the oil, freshly squeezed lemon juice, minced garlic, honey, herbs and seasoning in a glass measuring cup or bowl. Whisk well.

Finally, add the marinade to a baking dish. Place the fish in the marinade and cover. You’ll want to marinate the fish for at least an hour. But, you can leave it up to 24 hours prior to cooking it.

Lemon Herb Marinade:

  • 1/4 cup olive oil (organic, extra virgin)
  • 3 Tbsp. lemon juice, freshly squeezed
  • 1 Tbsp. honey
  • 2 cloves garlic, minced
  • 1 tsp. sea salt
  • 1/4 tsp. black pepper
  • 1 Tbsp. minced basil
  • 1 Tbsp. minced rosemary
  • 1 Tbsp. minced thyme

Fish:

  • 1 1/4 lb. salmon (wild caught)

Instructions

  • Heat the oven to 375 degrees Fahrenheit
  • Make the marinade. Mix together all of the ingredients in a glass measuring cup or bowl and whisk to combine.
  • Pour the marinade into a shallow baking dish or zip top bag. Place the fish in the container and marinade for at least an hour. Turn the fish at least once during the marinating process.
  • Bake the salmon in the oven for 15-20 minutes, depending on the thickness of the salmon.

Notes

The salmon can be marinated up to 24 hours. To save time the day of cooking the salmon, marinate it overnight or make the marinade in the morning the day of cooking.

Instead of baking the fish, consider grilling it on a piece of aluminum foil or in parchment paper.
